Speed & Glide - Longer boards (11'+) have greater waterline contact, reducing drag and increasing glide efficiency. A longer board will simply go faster and farther per stroke - this is physics (hull speed scales with waterline length). For touring or racing, this is a significant advantage.
Tracking (going straight) - Longer boards track better with less correction needed. Shorter boards are more maneuverable but require more paddle strokes to stay on course.
Stability - Because every Moaki'i board is built with a 32" wide stance, you get rock-solid side-to-side stability regardless of which model you choose. Length simply changes how that stability feels: longer boards (11'+) 'bridge' wave crests for a smoother ride in chop, while shorter boards stay nimble and easy to handle.
